One Week of Lunches – Day 2.

We started off with a bang yesterday! I’ve got this, right? I know this has been and is being done by moms all over the planet, but boy is it a lot of work. So much organization. Phew. Ok, I trudge on! Day 2.

Todays menu is:

Quinoa Salad consisting of the leftover chicken from Sunday Night’s Roast Chicken and chopped up Cucumbers, Carrots, Celery and Kale.
Cheddar Cheese Slice
Homemade Lemon Muffins made with Coconut Flour (recipe from the Helmsley Girls).
Peaches and Strawberries cut up

When Olivia got home from school yesterday she was wiped (first full day). So we decided to make the Lemon, Chia Seed Muffins from the Hemsley Hemsley Cookbook. The muffins are made with coconut flour, lemon rind, chia seeds, baking powder and maple syrup. I added a couple of special mini-chocolate chips after pleading from both kids! I’m hoping these last the week for their lunch box treat!

My kids love the Quinoa Salad that I make. So I prepped everything last night. Made it simplier than usual so that I didn’t feel like I was spending all my precious hours kid free (post bedtime) chopping. I cooked 1 cup of Quinoa, and chopped up Carrots, Celery and Cucumber. I also chopped up the last of Sunday’s Roast Chicken. I put them all together in a glass container for the next day. I also made an olive oil, red wine vinegar, dijon mustard, salt and pepper dressing for the salad and put in fridge.

This morning I decided that I wanted to add Kale to the salad so I quickly diced up one big leaf of Kale and added it to the salad.

I put the Quinoa Salad in the lunch box container. Added a Balderson Cheese package (I will make cheese cubes in the future but did not have any cheese to chop up this morning!). And then added one of the Lemon, Chia See Muffins. I chopped up some strawberries and peaches in their own little container.

At the last minute I got worried that she would still be hungry so I popped in one of the homemade granola bars. They are super healthy and filling. And I figured if she didn’t eat it, we could share it on the walk home from school!

The good news is that absolutely everything was eaten! Olivia asked to eat her leftover quinoa salad before we walked home. The lunch box was essentially licked clean by the time we got home. Very happy momma.
